ROASTED RED POTATO SALAD

Set oven at 425 degrees. Wash and cut Potatoes into bite-sized chunks. Combine with Garlic, 1Tbsp. Olive Oil, and ½ tsp. Herbamare in a 9" x 13" Baking dish. Toss well. Bake for 35 minutes or until the potatoes are tender. Combine 2 Tbs. Olive Oil, ½ tsp. Herbamare, Vegenaise, and Mustard in a serving bowl. Add Roasted Potatoes, Bell Pepper, and Onions. Toss gently. Serve hot or cold.

POLENTA PIZZA

Add water and Polenta mix to a deep saucepan. (Polenta pops and bubbles.)  Bring to a boil. Lower heat to medium. Cook for 5 minutes stirring frequently.  Smooth Polenta evenly into a 9" pie pan or 8" baking dish. Let stand for 20 minutes. Preheat oven to 375 degrees. Sauté Onions, Garlic, and Mushrooms in Ghee until Onions are translucent.  Spoon the Pasta Sauce, then, the sautéed mixture evenly over the firm Polenta. Next, add the Olives and Cheeses. Bake for 30-40 minutes. Serve warm.
